This Question is testing parallel construction.
The underlined portion should be parallel to 'What fruits do'. For the sentence to be parallel 'What fruits do' should be parallel to 'what humans do'
(A)The way human being breath is pointing to a noun. Not Correct.
(B) Would have been correct if the non underlined porion was about Fruits, and not what fruits do.
(C) Awkward construction, Not parallel.
(D) Awkward construction, Not parallel.
(E) [Correct], Perfect parallel structure.

E is correct. " continues to respire" has a parallel in "just as human beings do when they breathe"
A. Incorrect matching of tenses
B. Same as A
C. Same as A
D. you cannot match present prefect (continues to respire) with present continuous (when breathing)

(A) cant be correct as they are trying to compare two nouns Fruit and a human being. When two nouns are being compared "Like" need to be used.

Can someone elaborate why is A incorrect?
According to me, "similar to the way human beings breathe" modifies "taking in oxygen and giving off carbon dioxide"
and hence, there is no question of wrong comparison!

Look at the word "the way". This word set the tone for the comparaison of the action. A could be right if you want to compare the fruit and the human beings. But with the word "the way" in the middle, the sentence compares the action. Even though, E is long but it clarifies the ambiguity.

Adverb 'just as' is used to replace 'at the same time as' or 'the same way as'.
E - 'taking in oxygen and giving off carbon dioxide' is similar to the way 'human beings do' when they breathe.

What is the difference between - "Just as human beings do when they breathe" and "Just as human being breathe" . Both points to an action : breathing of human beings.

"like" should be used for comparing nouns
"as" should be used for comparing actions

A refers to the way...human being can breathe in many ways...slow, fast, etc But what they "do" when they breathe is to give out carbon dioxide and breathe oxygen". So what we do should be compared with what fruits do while breathing.
So A is not correct.
